Inspired by the famous “Almond Joy” candy bars, these brownies are perfect for satisfying your chocolate cravings while offering a little extra texture and flavor. Great for parties, snacks, or simply indulging at home!
Ingredients:
- For the brownie layer:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- For the coconut layer:
- 1 1/2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- For the topping:
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1/2 cup slivered almonds (toasted if preferred)
Directions:
- Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- Prepare the brownie layer:
- In a medium bowl, whisk together the melted butter and sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- Sift in the cocoa powder, flour, salt, and baking powder. Stir until everything is fully incorporated.
- Pour the brownie batter into the prepared baking pan and spread evenly.
- Bake the brownies for 18-20 minutes or until a toothpick inserted into the center comes out mostly clean. Allow it to cool for 10 minutes.
- Prepare the coconut layer:
- In a separate bowl, mix the shredded coconut with the sweetened condensed milk until well coated.
- Spread the coconut mixture evenly over the slightly cooled brownie layer.
- Melt the chocolate topping:
- Heat the chocolate chips and heavy cream together in a microwave-safe bowl in 30-second increments, stirring in between until smooth.
- Pour the chocolate ganache over the coconut layer and spread evenly with a spatula.
- Add the almonds:
- Sprinkle the slivered almonds over the chocolate topping, gently pressing them into the chocolate.
- Chill the bars in the refrigerator for 1-2 hours until set.
