This Farmhouse-Style Zucchini Bread is a wholesome, rustic treat that is moist, flavorful, and a great way to use up summer zucchinis. Ingredients:

  • 1 1/2 cups grated zucchini (about 1 medium zucchini)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil or melted butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Directions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the zucchini:
    • Grate the zucchini using a box grater and gently squeeze out any excess moisture using a clean kitchen towel or paper towel. Set it aside.
  3. Mix the dry ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Mix the wet ingredients:
    • In a large bowl, whisk together the oil (or melted butter), granulated sugar, brown sugar, eggs, and vanilla extract until smooth and well combined.
  5. Combine the wet and dry ingredients:
    • Gradually add the dry ingredients into the wet ingredients, stirring just until combined. Be careful not to overmix.
  6. Fold in zucchini and optional ingredients:
    • Gently fold in the grated zucchini. If desired, fold in the chopped nuts, raisins, or chocolate chips for added texture and flavor.
  7. Pour into loaf pan:
    • Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake:
    • Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool:
    • Let the zucchini bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve:
