Strawberry Sheet Cake Recipe

Strawberry Sheet Cake is a delightful, moist cake bursting with fresh strawberry flavor and topped with a creamy strawberry glaze. This easy-to-make sheet cake is perfect for summer barbecues, family gatherings, or any occasion where you want to serve a crowd with a light, fruity dessert.

Ingredients:

For the Cake:
  • 1 box white cake mix
  • 1 (3 oz) box strawberry-flavored gelatin (Jell-O)
  • 1 cup fresh strawberries, finely diced (or ½ cup strawberry puree)
  • ½ cup vegetable oil
  • 4 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
For the Strawberry Frosting:
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup fresh strawberry puree
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (optional, for thinning)

Directions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
  2. Prepare the cake batter: In a large mixing bowl, combine the white cake mix, strawberry gelatin, oil, eggs, milk, and vanilla extract. Beat the mixture on medium speed for 2 minutes, until well combined.
  3. Add the strawberries: Gently fold in the finely diced fresh strawberries (or strawberry puree) into the cake batter. This will add extra strawberry flavor and moisture to the cake.
  4. Bake the cake: Pour the batter into the prepared 9×13-inch baking pan and spread it evenly. Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
  5. Prepare the frosting: While the cake cools, make the frosting by beating the softened butter in a large bowl until creamy. Gradually add the powdered sugar, 1 cup at a time, beating on low speed until fully combined. Stir in the strawberry puree and vanilla extract. If the frosting is too thick, add 1-2 tablespoons of milk to thin it to your desired consistency.
  6. Frost the cake: Once the cake has cooled, spread the strawberry frosting evenly over the top of the cake using a spatula.
  7. Chill & Serve: For best results, chill the cake in the refrigerator for about 30 minutes before slicing and serving. Garnish with fresh strawberries if desired. Enjoy
