Layered Cabbage Roll Casserole is a simpler, deconstructed version of traditional cabbage rolls. This comforting dish features all the same flavors of beef, rice, and cabbage, but in a quicker, casserole format. Perfect for weeknight dinners or meal prep!
Ingredients
- For the Filling:
- 1 lb ground beef (or ground turkey)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup uncooked rice (or 2 cups cooked rice)
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 teaspoon thyme (optional)
- For the Layers:
- 1 medium head of cabbage, chopped (about 6-8 cups)
- 1 1/2 cups shredded mozzarella cheese (optional)
- Fresh parsley for garnish (optional)
Directions
- Cook the Filling:
- In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat.
- Add chopped onion and minced garlic, cooking until softened (about 3-4 minutes).
- Stir in uncooked rice, tomato sauce, diced tomatoes, tomato paste, Worcestershire sauce, paprika, thyme, salt, and pepper. If using cooked rice, stir it in at this stage. Let the mixture simmer for 10-15 minutes, stirring occasionally.
- Prepare the Cabbage:
- While the meat mixture is simmering, bring a large pot of water to a boil. Add the chopped cabbage and cook for 5-7 minutes until slightly tender. Drain well.
- Assemble the Casserole:
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish. Spread half of the cooked cabbage evenly on the bottom.
- Layer half of the meat mixture on top of the cabbage.
- Repeat with another layer of cabbage and the remaining meat mixture.
- Add Cheese (Optional):
- If you like, sprinkle the shredded mozzarella cheese evenly over the top of the casserole for a cheesy finish.
- Bake:
- Cover the casserole dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Serve:
- Let the casserole rest for 5 minutes before serving.
