Instant Pot Sausage Peppers & Onions Recipe

This Instant Pot Sausage, Peppers, and Onions recipe is a delicious, hearty, and flavorful meal that’s perfect for a quick weeknight dinner or meal prep. With juicy sausages and tender peppers and onions, it’s a one-pot wonder that requires minimal prep and delivers maximum flavor.

Ingredients:

  • 4 Italian sausages (mild or hot, based on preference)
  • 3 bell peppers (mixed colors – red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 1/2 cup chicken broth or water
  • Fresh parsley, chopped (for garnish)
  • Serve with hoagie rolls, pasta, or over rice (optional)

Directions:

  1. Sauté the sausages:
    Set your Instant Pot to “Sauté” mode. Add the olive oil and let it heat. Brown the sausages on all sides (about 2-3 minutes per side). Once browned, remove the sausages and set them aside.
  2. Sauté the vegetables:
    In the same pot, add the sliced onions, bell peppers, and garlic. Sauté for about 5 minutes until they begin to soften, scraping up any browned bits from the sausages.
  3. Deglaze the pot:
    Add the chicken broth (or water) to deglaze the pot, scraping up the remaining bits from the bottom of the Instant Pot. This helps prevent burning during pressure cooking.
  4. Add remaining ingredients:
    Stir in the diced tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Nestle the sausages back into the pot with the vegetables.
  5. Pressure cook:
    Close the lid of the Instant Pot and set the valve to “Sealing.” Pressure cook on high for 6 minutes. Once done, allow a natural pressure release for 5 minutes, then do a quick release.
  6. Serve:
    Once the pressure is released, open the lid. If you prefer a thicker sauce, set the Instant Pot to “Sauté” mode and simmer for a few minutes to reduce the liquid. Garnish with fresh parsley.
  7. Enjoy:
    Serve the sausages, peppers, and onions on hoagie rolls, over pasta, or alongside rice.
