This Instant Pot Sausage, Peppers, and Onions recipe is a delicious, hearty, and flavorful meal that’s perfect for a quick weeknight dinner or meal prep. With juicy sausages and tender peppers and onions, it’s a one-pot wonder that requires minimal prep and delivers maximum flavor.
Ingredients:
- 4 Italian sausages (mild or hot, based on preference)
- 3 bell peppers (mixed colors – red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
- 1/2 cup chicken broth or water
- Fresh parsley, chopped (for garnish)

Directions:
- Sauté the sausages:
Set your Instant Pot to “Sauté” mode. Add the olive oil and let it heat. Brown the sausages on all sides (about 2-3 minutes per side). Once browned, remove the sausages and set them aside. - Sauté the vegetables:
In the same pot, add the sliced onions, bell peppers, and garlic. Sauté for about 5 minutes until they begin to soften, scraping up any browned bits from the sausages. - Deglaze the pot:
Add the chicken broth (or water) to deglaze the pot, scraping up the remaining bits from the bottom of the Instant Pot. This helps prevent burning during pressure cooking. - Add remaining ingredients:
