Farmhouse Pineapple Casserole Recipe

This sweet and savory Farmhouse Pineapple Casserole is a classic Southern dish that combines the tangy sweetness of pineapple with a buttery, cheesy breadcrumb topping. It’s a perfect side dish for holiday dinners, potlucks, or any family gathering, offering a delicious twist on traditional casseroles.

Ingredients

  • 1 cup sugar
  • 6 tablespoons all-purpose flour
  • 2 cups sharp cheddar cheese, shredded
  • 2 cans (20 oz each) pineapple chunks, drained (reserve ½ cup juice)
  • 1 cup Ritz crackers, crushed
  • ½ cup butter, melted

Directions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Mix the Filling: In a large bowl, combine the sugar and flour. Add the drained pineapple chunks and the reserved pineapple juice, and stir to coat the pineapple with the sugar-flour mixture.
  3. Add Cheese: Fold in the shredded cheddar cheese to the mixture and pour the mixture into a greased 9×13-inch baking dish.
  4. Prepare the Topping: In a separate bowl, mix the crushed Ritz crackers with the melted butter until evenly coated.
  5. Assemble the Casserole: Sprinkle the buttery cracker mixture evenly over the pineapple-cheese filling.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.
  7. Serve: Let the casserole cool slightly before serving. It pairs beautifully with ham, turkey, or any savory holiday dish.
