- 4 pork chops (bone-in or boneless)
- 2 tablespoons vegetable oil
- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1-2 teaspoons Sriracha (or another hot sauce), adjust to taste
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- ¼ cup coconut milk or water (for thinning the sauce if needed)

Directions:
- Prepare the Sauce:
In a small bowl, whisk together peanut butter, soy sauce, lime juice, fish sauce, honey, Sriracha, minced garlic, and grated ginger. If the sauce is too thick, add a little coconut milk or water to reach your desired consistency. - Cook the Pork Chops:
Heat vegetable oil in a large skillet over medium-high heat. Season the pork chops with a pinch of salt and pepper on both sides. Once the oil is hot, add the pork chops to the skillet and sear for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C).
