Disappearing Marshmallow Brownies Recipe

Disappearing Marshmallow Brownies are a delightful twist on traditional brownies, featuring gooey pockets of marshmallow that melt into the batter as they bake, creating irresistible bites of chocolatey goodness. These brownies are perfect for anyone who loves a rich and fudgy treat with a fun surprise inside!

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Directions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Mix the wet ingredients:
    In a large bowl, whisk together the melted butter and sugar until combined. Add the eggs and vanilla extract, and continue whisking until the mixture is smooth.
  3. Mix the dry ingredients:
    In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt.
  4. Combine wet and dry ingredients:
    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Fold in marshmallows and chocolate chips:
    Gently fold the mini marshmallows, chocolate chips, and nuts (if using) into the batter. Be sure the marshmallows are evenly distributed.
  6. Bake:
    Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (avoid overbaking to keep them fudgy).
  7. Cool and serve:
    Remove the brownies from the oven and allow them to cool in the pan for at least 15 minutes before cutting into squares. The marshmallows may melt into the batter, giving the brownies a unique texture—hence the “disappearing” marshmallows!
