Chocolate-Covered Cherry Cookies are a delightful combination of rich chocolate cookies topped with a sweet maraschino cherry and drizzled with a luscious chocolate glaze. These cookies are perfect for special occasions, holidays, or anytime you crave a decadent, cherry-filled treat!
Ingredients:
For the Cookies:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 24-30 maraschino cherries, drained
For the Chocolate Glaze:
- 1 cup semi-sweet chocolate chips
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Directions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Make the Cookie Dough:
- In a medium bowl, whisk together the flour, cocoa powder, salt, baking soda, and baking powder.
- In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla extract, beating until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Shape the Cookies: Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet. Using your thumb or the back of a spoon, make an indentation in the center of each cookie.
- Add the Cherries: Place a maraschino cherry in the indentation of each cookie. Set the cookies aside while you prepare the glaze.
- Make the Chocolate Glaze: In a small saucepan over medium heat, melt the chocolate chips and sweetened condensed milk together, stirring constantly until smooth. Remove from heat and stir in the vanilla extract.
- Top the Cookies: Spoon a small amount of the chocolate glaze over each cherry, making sure it drips slightly over the edges of the cookies.
- Bake the Cookies: Bake the cookies in the preheated oven for 10–12 minutes or until the cookies are set and the glaze is shiny. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Serve: Enjoy these decadent Chocolate-Covered Cherry Cookies warm or at room temperature. They make for a perfect dessert or holiday treat!
