Butterscotch Cookie Bars Recipe

Butterscotch Cookie Bars are rich, chewy, and packed with the sweet, buttery flavor of butterscotch. These bars are easy to make and perfect for satisfying your sweet tooth. With a soft center and a slightly crispy edge, they’re the perfect treat for any occasion.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups butterscotch chips
  • Optional: ½ cup chopped pecans or walnuts (for extra crunch)

Directions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Prepare Wet Ingredients:

  • In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

4. Combine Wet and Dry Ingredients:

  • Gradually fold the dry ingredients into the wet ingredients until just combined (do not overmix). Fold in the butterscotch chips and optional chopped nuts.

5. Spread the Batter:

  • Pour the batter into the prepared baking dish and spread it evenly.

6. Bake:

  • Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

7. Cool and Slice:

  • Allow the bars to cool completely in the pan before slicing them into squares or rectangles.
