– 1 teaspoon Dijon mustard
– 1/2 teaspoon apple cider vinegar
– 1/4 teaspoon garlic powder
– Salt and pepper, to taste
– Fresh chives or green onions, finely chopped (for garnish)

Directions:
1. Prepare the Eggs:
Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a medium bowl and set the egg whites aside.
2. Make the Filling:
Mash the egg yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, and salt and pepper to taste. Mix until creamy and well combined.
3. Add Bacon and Jalapeño:
Fold in the crumbled bacon and finely chopped jalapeño, reserving a little of each for garnish if desired. Taste the mixture and adjust seasoning as needed.
4. Fill the Egg Whites:
Using a spoon or a piping bag for a more decorative touch, fill each egg white half with the yolk mixture.
5. Garnish and Serve:
Sprinkle the tops with reserved bacon, jalapeño, fresh chives, and a pinch of smoked paprika for an extra pop of flavor and color. Arrange on a serving platter and enjoy these savory, spicy bites!
