Almond Chicken Salad is a light and crunchy dish made with tender chicken, toasted almonds, and fresh vegetables, all tossed in a flavorful dressing. It’s perfect for lunch, a light dinner, or as a filling for sandwiches and wraps. The combination of savory chicken, the nutty crunch of almonds, and the creamy dressing makes this salad a refreshing yet satisfying option.
Ingredients:
- 3 cups cooked chicken, shredded or diced (rotisserie chicken works well)
- ½ cup mayonnaise
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp honey (optional)
- 1 celery stalk, diced
- ¼ cup red onion, finely chopped
- ½ cup red grapes, halved (optional)
- ⅓ cup toasted sliced almonds
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Lettuce leaves, for serving (optional)
Directions:
- Prepare the dressing: In a large bowl, whisk together the mayonnaise, Greek yogurt or sour cream, Dijon mustard, lemon juice, and honey (if using). Season with salt and pepper to taste.
- Assemble the salad: Add the shredded or diced chicken, diced celery, chopped red onion, and halved grapes to the bowl with the dressing. Stir until all the ingredients are well coated.
- Add the almonds: Gently fold in the toasted sliced almonds and chopped parsley. This adds a crunchy texture and fresh flavor to the salad.
- Chill: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
- Serve: Serve the Almond Chicken Salad on its own, over a bed of lettuce, or in sandwiches or wraps. Enjoy!
