This Bacon Cheeseburger Meatloaf combines the best of both worlds: the juicy, savory flavors of a cheeseburger with the comforting heartiness of meatloaf. Packed with bacon, cheese, and ground beef, this dish brings the taste of a classic burger into a warm, baked loaf that’s perfect for family dinners. Topped with a tangy glaze, this meatloaf is bursting with flavor and makes for amazing leftovers, too!

Ingredients:

  • For the meatloaf:
    • 1 1/2 lbs ground beef (80/20 for juiciness)
    • 6 slices of bacon, cooked and crumbled
    • 1 cup shredded cheddar cheese
    • 1/2 cup breadcrumbs (plain or seasoned)
    • 1/4 cup ketchup
    • 2 tablespoons mustard
    • 1 tablespoon Worcestershire sauce
    • 1 large egg, lightly beaten
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • Salt and pepper to taste
  • For the glaze:
    • 1/4 cup ketchup
    • 2 tablespoons mustard
    • 2 tablespoons brown sugar
    • 1 tablespoon barbecue sauce (optional for extra flavor)

Directions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or baking dish.
  2. Cook the bacon:
    • Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces. Set aside.
  3. Prepare the meatloaf mixture:
    • In a large bowl, combine the ground beef, crumbled bacon, shredded cheddar cheese, breadcrumbs, ketchup, mustard, Worcestershire sauce, beaten egg, chopped onion, garlic, salt, and pepper.
    • Mix gently with your hands or a spoon until everything is evenly combined. Be careful not to overmix, as this can make the meatloaf dense.
  4. Shape the meatloaf:
    • Transfer the meat mixture into a loaf pan or shape it into a loaf on a baking sheet.
    • Smooth out the top and press the loaf down lightly.
  5. Prepare the glaze:
    • In a small bowl, whisk together the ketchup, mustard, brown sugar, and barbecue sauce (if using).
    • Spread the glaze evenly over the top of the meatloaf.
  6. Bake:
    • Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C) and the top is caramelized and slightly crispy.
  7. Rest and serve:
    • Allow the meatloaf to rest for 5-10 minutes before slicing. This helps retain the juices and makes it easier to cut.
