Cheesy Bacon Potato Casserole Recipe

Cheesy Bacon Potato Casserole is a comforting, hearty dish that’s perfect for family dinners, potlucks, or holiday gatherings. This delicious casserole combines tender potatoes with crispy bacon, gooey melted cheese, and a creamy sauce to create a satisfying meal or side dish that everyone will love.

Ingredients:

  • 6–8 medium russet potatoes, peeled and diced
  • 1 pound bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese (or a blend of cheddar and mozzarella)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped green onions (optional, for garnish)
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Cook the Potatoes:
    • Place the diced potatoes in a large pot of salted water. Bring to a boil and cook for 10–12 minutes, or until the potatoes are just tender. Drain and set aside.
  3. Prepare the Bacon: While the potatoes are cooking, fry the bacon in a skillet over medium heat until crispy. Once cooked, drain on a paper towel and crumble into small pieces.
  4. Make the Creamy Sauce:
    • In a large bowl, combine the sour cream, mayonnaise, softened cream cheese, melted butter, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  5. Assemble the Casserole:
    • Gently fold the cooked potatoes and half of the crumbled bacon into the creamy mixture until everything is evenly coated. Transfer the potato mixture into the prepared baking dish, spreading it out evenly.
    • Sprinkle the shredded cheddar cheese evenly over the top, followed by the remaining bacon.
  6. Bake:
    • Bake the casserole in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  7. Garnish and Serve:
    • Remove the casserole from the oven and let it cool slightly before serving. Garnish with chopped green onions and parsley, if desired.
