Ingredients:
For the Crust:
- 1 store-bought pie crust (or homemade if preferred)
For the Filling:
- 6 slices bacon, cooked and crumbled
- 1 ½ cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 1 cup shredded cheese (cheddar, Gruyère, or Swiss)
- 4 large eggs
- 1 cup heavy cream (or half-and-half)
- ½ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
Directions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Pie Crust:
- Roll out the store-bought or homemade pie crust and fit it into a 9-inch pie dish. Trim any excess dough around the edges and crimp the edges if desired.
- Blind bake the crust by lining it with parchment paper and filling it with pie weights (or dried beans). Bake for 10-12 minutes, then remove the weights and bake for an additional 5 minutes until lightly golden. Set aside.
3. Cook the Bacon and Spinach:
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces.
- In the same skillet, sauté the spinach for 2-3 minutes, until wilted (if using fresh spinach). If using frozen spinach, make sure to squeeze out any excess water before adding it to the filling.
4. Mix the Filling:
- In a large bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and optional nutmeg until well combined.
5. Assemble the Quiche:
- Evenly spread the crumbled bacon and sautéed spinach across the bottom of the baked pie crust. Sprinkle the shredded cheese on top.
- Pour the egg mixture over the filling ingredients, making sure it’s evenly distributed.
6. Bake:
- Place the quiche in the preheated oven and bake for 35-40 minutes, or until the center is set and the top is golden brown. A toothpick inserted into the center should come out clean.
