Reuben Dip {Farmhouse Style} Recipe

Reuben Dip is a warm, creamy, and cheesy appetizer inspired by the classic Reuben sandwich. Packed with corned beef, sauerkraut, Swiss cheese, and a tangy dressing, this dip is perfect for parties, game days, or as a snack. It pairs well with rye bread, crackers, or even veggies for dipping.

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded Swiss cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chopped corned beef (deli-style or leftover corned beef)
  • 1 cup sauerkraut, well-drained
  • 2 tablespoons Thousand Island dressing
  • 1 tablespoon Dijon mustard (optional)
  • Rye bread, crackers, or pretzels for serving

Directions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Mix the Creamy Base:

  • In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, and Thousand Island dressing. Mix until smooth and creamy.

3. Add the Filling Ingredients:

  • Stir in the chopped corned beef, sauerkraut (make sure it is well-drained), shredded Swiss cheese, and shredded cheddar cheese. If you want extra tanginess, add the Dijon mustard.

4. Transfer to Baking Dish:

  • Pour the dip mixture into a greased 9-inch pie dish or any shallow, oven-safe dish. Spread it out evenly.

5. Bake:

  • Bake the dip in the preheated oven for 20-25 minutes, or until it is hot and bubbly, and the top is lightly golden.

6. Cool and Serve:

  • Allow the dip to cool for a few minutes before serving. Serve with rye bread slices, crackers, pretzels, or any other dippers of your choice.
