Turkey Sausage Breakfast Casserole is a hearty and healthy dish perfect for breakfast or brunch. Packed with lean turkey sausage, eggs, cheese, and vegetables, this casserole is easy to prepare and great for feeding a crowd or meal prepping for the week. It’s a flavorful and nutritious way to start the day!

Ingredients:

  • 1 lb turkey sausage (ground or links, casings removed)
  • 6 large eggs
  • 1 cup milk (whole, skim, or dairy-free alternative)
  • 1 ½ cups shredded cheddar cheese (or cheese of your choice)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cups baby spinach (optional)
  • 3 cups frozen hash browns (or diced potatoes)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Cooking spray or butter for greasing the baking dish

Directions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the turkey sausage: In a large skillet over medium heat, cook the turkey sausage, breaking it up into small crumbles, until browned and fully cooked (about 6-8 minutes). Drain any excess fat and set aside.
  3. Sauté the vegetables: In the same skillet, add the diced onion and bell pepper. Cook until softened, about 4-5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat.
  4. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper.
  5. Assemble the casserole: Layer the frozen hash browns or diced potatoes evenly in the bottom of the prepared baking dish. Spread the cooked turkey sausage over the potatoes, followed by the sautéed vegetables. Sprinkle the shredded cheese evenly over the top.
  6. Pour the egg mixture: Slowly pour the egg mixture over the casserole, making sure it covers all the ingredients evenly.
  7. Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown.
  8. Cool & Serve: Allow the casserole to cool for about 5 minutes before slicing and serving. Enjoy with a side of fresh fruit or toast!
