Almond Chicken Salad is a light and crunchy dish made with tender chicken, toasted almonds, and fresh vegetables, all tossed in a flavorful dressing. It’s perfect for lunch, a light dinner, or as a filling for sandwiches and wraps. The combination of savory chicken, the nutty crunch of almonds, and the creamy dressing makes this salad a refreshing yet satisfying option.

Ingredients:

  • 3 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • ½ cup mayonnaise
  • 2 tbsp Greek yogurt or sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp honey (optional)
  • 1 celery stalk, diced
  • ¼ cup red onion, finely chopped
  • ½ cup red grapes, halved (optional)
  • ⅓ cup toasted sliced almonds
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Lettuce leaves, for serving (optional)

Directions:

  1. Prepare the dressing: In a large bowl, whisk together the mayonnaise, Greek yogurt or sour cream, Dijon mustard, lemon juice, and honey (if using). Season with salt and pepper to taste.
  2. Assemble the salad: Add the shredded or diced chicken, diced celery, chopped red onion, and halved grapes to the bowl with the dressing. Stir until all the ingredients are well coated.
  3. Add the almonds: Gently fold in the toasted sliced almonds and chopped parsley. This adds a crunchy texture and fresh flavor to the salad.
  4. Chill: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  5. Serve: Serve the Almond Chicken Salad on its own, over a bed of lettuce, or in sandwiches or wraps. Enjoy!
