Easy Thai Pork Chops with Peanut Butter Recipe

These Thai-inspired pork chops are packed with flavor and super easy to prepare. The rich, creamy peanut butter sauce adds a delightful twist to the savory pork, making this dish a perfect combination of sweet, salty, and slightly spicy. It’s a great option for a quick weeknight dinner that feels a bit exotic!

Ingredients:

  • 4 pork chops (bone-in or boneless)
  • 2 tablespoons vegetable oil
  • ¼ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1-2 teaspoons Sriracha (or another hot sauce), adjust to taste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ¼ cup coconut milk or water (for thinning the sauce if needed)
  • 2 tablespoons chopped peanuts (optional, for garnish)
  • Fresh cilantro or green onions (for garnish)
  • Lime wedges (for serving)

Directions:

  1. Prepare the Sauce:
    In a small bowl, whisk together peanut butter, soy sauce, lime juice, fish sauce, honey, Sriracha, minced garlic, and grated ginger. If the sauce is too thick, add a little coconut milk or water to reach your desired consistency.
  2. Cook the Pork Chops:
    Heat vegetable oil in a large skillet over medium-high heat. Season the pork chops with a pinch of salt and pepper on both sides. Once the oil is hot, add the pork chops to the skillet and sear for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from the skillet and set aside to rest.
  3. Make the Peanut Sauce:
    In the same skillet, lower the heat to medium, and pour in the peanut butter sauce. Stir continuously for 1-2 minutes until the sauce is warmed through and slightly thickened. If needed, add more coconut milk or water to thin it out.
  4. Combine & Serve:
    Add the cooked pork chops back into the skillet, spoon the peanut sauce over them, and let everything simmer for an additional 2-3 minutes to blend the flavors.
  5. Garnish and Enjoy:
    Serve the pork chops hot, garnished with chopped peanuts, fresh cilantro or green onions, and lime wedges on the side.

Tips:

  • Pair these pork chops with steamed jasmine rice or a crisp side salad.
  • Adjust the heat level to your liking by increasing or reducing the Sriracha.
  • For an extra Thai kick, toss in some chopped lemongrass or a splash of rice vinegar!
