Cookie Dough Truffles with Chocolate Chips Recipe

Cookie Dough Truffles with Chocolate Chips are a delicious no-bake treat that combines the irresistible taste of cookie dough with a smooth chocolate coating. Since the cookie dough is made without eggs, these truffles are safe to eat and perfect for satisfying your sweet cravings. They make great gifts, party treats, or indulgent snacks.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 1/4 cups all-purpose flour (heat-treated for safety)
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips
  • 10 oz semi-sweet or milk chocolate (for coating)
  • Optional: sprinkles, sea salt, or extra mini chocolate chips for garnish

Directions

  1. Prepare the Flour (Optional for Safety):
    • To make the raw flour safe to eat, preheat your oven to 350°F (175°C). Spread the flour on a baking sheet and bake for 5–7 minutes. Let it cool completely before using.
  2. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla extract and milk, and mix until combined.
  3. Add the Dry Ingredients:
    • Gradually mix in the flour and salt until the dough comes together. Stir in the mini chocolate chips until evenly distributed throughout the dough.
  4. Form the Truffles:
    • Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls. Place them on a parchment-lined baking sheet. Once all the dough is rolled, refrigerate the truffles for 30 minutes to firm up.
  5. Melt the Chocolate:
    • In a microwave-safe bowl, melt the semi-sweet or milk chocolate in 30-second intervals, stirring in between, until fully melted and smooth.
  6. Coat the Truffles:
    • Using a fork or dipping tool, dip each cookie dough ball into the melted chocolate, allowing any excess chocolate to drip off. Place the coated truffles back on the parchment-lined baking sheet.
  7. Garnish and Set:
    • If desired, garnish the truffles with sprinkles, a pinch of sea salt, or extra mini chocolate chips before the chocolate sets. Refrigerate the truffles for another 20–30 minutes until the chocolate hardens.
  8. Serve or Store:
    • Once set, the cookie dough truffles are ready to enjoy! Store them in an airtight container in the refrigerator for up to a week.
