Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter (softened)
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/3 cups sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped nuts (optional, such as walnuts or pecans)
  • 1/2 cup toffee bits (optional)

Directions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the dry ingredients:
    In a medium bowl, combine the graham cracker crumbs, flour, and baking powder. Mix well to ensure the baking powder is evenly distributed.
  3. Mix the wet ingredients:
    In a large bowl, beat the softened butter until smooth and creamy. Add the sweetened condensed milk and continue to mix until fully combined.
  4. Combine wet and dry ingredients:
    Gradually add the graham cracker mixture to the wet ingredients, stirring until the dough is well mixed.
  5. Add the “treasures”:
    Fold in the shredded coconut, chocolate chips, and any additional “treasures” like chopped nuts or toffee bits. Stir until all ingredients are evenly distributed throughout the dough.
  6. Form the cookies:
    Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a cookie scoop or tablespoon for uniform-sized cookies.
  7. Bake the cookies:
    Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
