Oatmeal Cottage Cheese Pancakes are a healthy and protein-packed twist on traditional pancakes. Ingredients

  • 1 cup rolled oats (use gluten-free oats if necessary)
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon (optional)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • A pinch of salt
  • Cooking spray or butter (for the pan)

Optional Toppings:

  • Fresh fruits (bananas, berries)
  • Honey or maple syrup
  • Greek yogurt
  • Nuts or seeds

Directions

  1. Blend the Batter:
    • In a blender or food processor, add the rolled oats, cottage cheese, eggs, vanilla extract, baking powder, cinnamon, honey (if using), and a pinch of salt.
    • Blend until smooth and well-combined. The batter should be thick but pourable.
  2. Preheat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or butter.
  3. Cook the Pancakes:
    • Pour about ¼ cup of the batter onto the hot skillet for each pancake.
    • Cook for 2-3 minutes on each side or until golden brown and cooked through. You should see bubbles forming on the surface before flipping.
  4. Serve:
    • Stack the pancakes on a plate and top them with your choice of fresh fruits, honey, maple syrup, or any of your favorite toppings.
